The real recipe for Arlesian beef stew! A delicious winter recipe, a comforting casserole made with beef, pork, black olives, and white wine.
Ingredients for 6 people :

- 1 kg beef (leg, cheek, hen)
- 200g pork belly
- 3 onions
- 2 tablespoons flour
- 0.5 liters of dry white wine
- 2 cloves of garlic
- 1 bouquet garni
- 4 tomates
- 3 tablespoons of pitted black olives
Instructions:

- Cut the meat into pieces
- Cut the bacon into small pieces
- Peel and chop the onions
- In the casserole dish with very hot olive oil, brown the bacon and onions.
- Remove the bacon and onions from the casserole dish, add the meat and brown it.
- Sprinkle with flour, stir, add bacon and onions and deglaze with white wine
- Add the garlic, the bouquet garni, salt and pepper
- Cover and cook over low heat for 2 to 3 hours
- Add the tomato and cook for another 30 minutes.
- Add the olives at the end of cooking
