The real recipe for Arlesian beef stew! A delicious winter recipe, a comforting casserole made with beef, pork, black olives, and white wine.

Ingredients for 6 people :

  • 1 kg beef (leg, cheek, hen)
  • 200g pork belly
  • 3 onions
  • 2 tablespoons flour
  • 0.5 liters of dry white wine
  • 2 cloves of garlic
  • 1 bouquet garni
  • 4 tomates
  • 3 tablespoons of pitted black olives

Instructions:

  • Cut the meat into pieces
  • Cut the bacon into small pieces
  • Peel and chop the onions
  • In the casserole dish with very hot olive oil, brown the bacon and onions.
  • Remove the bacon and onions from the casserole dish, add the meat and brown it.
  • Sprinkle with flour, stir, add bacon and onions and deglaze with white wine
  • Add the garlic, the bouquet garni, salt and pepper
  • Cover and cook over low heat for 2 to 3 hours
  • Add the tomato and cook for another 30 minutes.
  • Add the olives at the end of cooking
