A real ratatouille recipe cooked by locals! It's a Provençal specialty made in the summer, using sun-drenched vegetables, perfect to accompany your grilled meats!

Ratatouille is a traditional culinary specialty of Niçoise, Provençal, Occitan and Mediterranean cuisines, made from a simmered stew of Mediterranean vegetables and olive oil.

Ingredients for 4 persons :

  • 1 onion
  • 4 courgettes
  • 1 eggplant
  • 1 red or green pepper
  • 2 tomates
  • 1 clove of garlic 
  • Thyme
  • Olive oil

Instructions:

  • In a casserole dish, brown the chopped onion in olive oil.
  • Remove the onions and brown the cubed zucchini.
  • Remove the zucchini and brown the cubed eggplant.
  • Remove the eggplant and brown the diced pepper. 
  • Return all the vegetables to the casserole dish and add the tomatoes cut into small pieces.
  • Add the garlic clove cut into 4, salt, pepper and thyme, stir everything together.
  • Simmer covered for 10 to 15 minutes.

Serve with meat or rice.
