A real ratatouille recipe cooked by locals! It's a Provençal specialty made in the summer, using sun-drenched vegetables, perfect to accompany your grilled meats!
Ratatouille is a traditional culinary specialty of Niçoise, Provençal, Occitan and Mediterranean cuisines, made from a simmered stew of Mediterranean vegetables and olive oil.

Ingredients for 4 persons :

- 1 onion
- 4 courgettes
- 1 eggplant
- 1 red or green pepper
- 2 tomates
- 1 clove of garlic
- Thyme
- Olive oil
Instructions:

- In a casserole dish, brown the chopped onion in olive oil.
- Remove the onions and brown the cubed zucchini.
- Remove the zucchini and brown the cubed eggplant.
- Remove the eggplant and brown the diced pepper.
- Return all the vegetables to the casserole dish and add the tomatoes cut into small pieces.
- Add the garlic clove cut into 4, salt, pepper and thyme, stir everything together.
- Simmer covered for 10 to 15 minutes.
Serve with meat or rice.
