A bed of capers, anchovies, pickles, and onions, a nice piece of meat to simmer… This is Saint-Gilloise agriade, an authentic and delicious dish. A treat for your taste buds!
Saint-Gilloise agriade or sailors' stew is a typical dish from the Gard, a local specialty that the people of Saint-Gilloise, Camargue farmers and boatmen of the Rhône would eat at their workplace.
Ingredients:
- 1 kg of thinly sliced chuck
- 1 kg of onions
- 12 pickles
- 100 g of capers
- 200 g of anchovies in oil
- Salt and pepper

Instructions:

- Roughly mix the onions, capers, pickles, anchovies and pepper.
- In a casserole dish with a little oil, add a layer of chuck steak, a layer of the above mixture, and so on, until all the chuck steak is used up. Feel free to add a little olive oil between the different layers.
- Cover and cook for about 3 hours over low heat. You can add a glass of water if necessary.
Serve piping hot with Camargue rice.
